The Catskills Emerson Resort & Spa finally unveiled its newly renovated facilities last week, including a 6,193-square-foot spa, and it looks better than we imagined. The grand opening took place on Thursday, September 22, starting with an evening ribbon-cutting ceremony led by Co-Spa Directors Christina Burns and Liz Zabel, who welcomed guests to the new facility via ground tours, mini spa treatments and consultations, as well as a tasting from the resort’s recently opened restaurant, Woodnotes Grille.

The 20-acre luxury resort took two years and $6 million to renovate. It now features a full-service spa area, complete with a new menu of customized treatments and in-house blended aromatherapy oils. Bask in an ancient global therapy like Thai yoga massage or Indian Ayurvedic herbal treatment, unwind with a seaweed body wrap, or re-energize yourself with an anti-aging Elemis Biotec facial, exclusive to the Emerson Spa within the Hudson Valley region.

“We’re very excited to bring a unique line of treatments and therapies to the Catskills,” said Zabel in a statement. “We looked for ways to combine the Earth’s elements and individualized attention to create an environment that wasn’t just a treatment, but a complete, harmonious experience.” 

Hungry post-spa sesh? Dig in to a hearty bowl of zucchini pasta with tomatillos, carrots, cherry tomatoes, and tahini from the spa lunch menu, or head to Woodnotes for an assortment of light and healthy options, all curated from locally sourced ingredients. There, choose from dinner items like bacon-wrapped smoked trout with baby bok choy and a sweet potato, hot cherry pepper hash, or slurp up a spicy vegan stew with Mediterranian ingredients like kalamata olives, eggplant, and saffron rice. Finish off your meal right with an indulgent lemon-scented olive oil cake with raspberry coulis and homemade basil ice cream. A selection of handcrafted cocktails completes this culinary Catskills experience.

Once the site of a 19th century dairy farm, the Emerson Resort & Spa is today nestled in the tranquility of the region that inspired Ralph Waldo Emerson to write his 1836 essay, “Nature.” But, a trip to Emerson is more than just stunning views and serenity.
