While you might think that tacos, burritos, quesadillas, and similar foods would be the highlight of a Southwestern/Mexican restaurant, Kingston’s Armadillo Bar & Grill comes out on top with — that’s right — a hamburger.
The restaurant’s sizzling Texas Size Burger ($11.95) is made with Black Angus beef and weighs in at a whopping three-quarters of a pound. So what exactly makes it so delicious? “We just get the best quality meat and grill it,” says owner Merle Borenstein. Chef Francisco Pacheco cooks the burger over an open fire, and “doesn’t mess with it too much or add things to it,” Borenstein adds. “We have no secrets except for a great chef. My grill guy is phenomenal.”
Load your meaty treat with the toppings of your choice, including Armadillo’s popular “frizzled tobacco” onions (thin onion rings named for the way they look after they are fried to a crisp).
In spite of its Mexican roots, Armadillo’s prominent patty draws in the crowds. “People rave about them, which took me by surprise,” says Borenstein. “But we make one heck of a burger.”
