We care about traditional comfort foods — a bowl of homemade chicken soup with a big matzo ball, creamy mac ’n cheese spiffed up with lobster or truffles, and robust chili with all the fixings. But bring on the chocolate, and we might just forget that the temperatures are dipping and the icicles are dangling. Yes, we’re crazy about chocolate in the Hudson Valley, and not just for Valentine’s Day. An increasing number of area chocolate makers incorporate the beans — often fair trade — or processed chocolate into all sorts of irresistible shapes, sizes, and flavors. Besides helping to say “I love you,” or perking up spirits in winter’s dark days, scientists encourage (moderate) consumption because of health benefits, including lowering cholesterol. But the best reason: It tastes divine.
