The round, crusty, toppings-laden concoctions that appear from the Black Forest Flammkuchen food truck may look like pizza, but they’re not. Rooted in French and German culinary traditions, the flatbread snacks are a canvas for seasonal Hudson Valley ingredients. Although the menu, devised by the owners of The Flammerie in Kinderhook, changes around the harvest of the week, keep an eye out for the Gratinee, made with spiced crème, fresh mozzarella, goat cheese, Gruyere, and dressed watercress. It’s a whole new spin on white pizza.

Paisan Wheels

When it comes to pizza, Paisan Wheels doesn’t play any games. The traveling wood fired unit crafts pies that receive rave reviews from hungry eaters throughout the Hudson Valley. Look for the truck at local vineyards like Pennings in Warwick and Baldwin in Pinebush. As for what to order, specialty toppings like chorizo, grapes, and smoked bacon make this rover a must-visit.

 

Pizza Luca

It should come as no surprise that pizza is the name of the game at this charming food truck. Unlike conventional food trucks, Pizza Luca cooks up its doughy creations in a Neapolitan pizza oven that is cleverly mounted on a 1952 Chevy flatbed truck. The oven reaches 900-degree temperatures to properly cook an authentic Italian pizza. As for flavors, the truck offers four mouthwatering options: Marinara, Margherita, Filetti, and Bianca. All will leave you craving more.

Potenza

Don’t expect to pick up an average NY slice at Potenza. The old world pizza truck crafts wood fired Neapolitan pizza out of its custom oven. Although the brand is based in Goshen, it is a regular presence at local festivals and food truck friendly events. All the pizzas are cooked to order and come out fresh, crusty, and utterly delicious. If you go with a friend, order two pies and sample options like Pomodoro, Garlic and Onion, and Applewood Bacon.
