A faithfully restored 1797 stone tavern is the setting for chef John Novi's creative New American cuisine. The menu combines Hudson Valley produce with international flavors. Open for breakfast, lunch, brunch, and dinner Saturday-Sunday. Prix fixe: 4-course $65, 8-course $85. CHEFS ON FIRE, the bistro in the wine cellar, offers dishes prepared in a wood-fired oven. AMICI SUSHI (845-687-7778) is also available to eat in or take out. Lunch and dinner Wednesday through Sunday.

Even better, between courses you’ll have plenty of time to bill and coo, or pop the question. Best Dining Adventure 2005Everybody’s mixing it up these days, but chef John Novi, who invented octopus choucroute years and years ago, is still dreaming up delicious and daring combinations. If you’re not bold enough to try such delicacies as pig’s head cheese pâté, or unagi eel with matjes herring (served with a shot of black currant vodka), you can do what De Niro does, and go for the chicken.
