A graduate of the Culinary Institute of America in Hyde Park, Derek Corsino specializes in unique cakes using a variety of buttercreams, frostings, mousses, fresh fruits, chocolates, gumpaste, fondants, and glazes. The customer's imagination is the only limit to flavor combinations, and examples of past cakes include Espresso Soaked Chocolate Cake with Milk Chocolate Mousse and Genache and Carrot Cake with Cream Cheese Frosting and Poached Pears. Corsino also makes grooms' cakes (most ranging $200-$500), with the most popular being a chocolate cake, with chocolate ganache, mousse, and buttercream. “The outside is rolled with a smooth fondant and topped with chocolate roses that taste like Tootsie Rolls," explains Corsino.
