Chef Daniel Gendron is a CIA grad who prepared food at Manhattan's Tavern on the Green and Windows on the World and served as Chef at the Valeur Mansion in Rhinebeck. Open since 1998, Gendron Catering emphasizes seasonal, local ingredients (as well as organic produce and hormone-free poultry and meats) in his menus, which he refers to as "an explosion of flavors and a riot of colors." Entree selections include lacquered duck; butterflied roast leg of lamb stuffed with black olive garlic tapenade; and snapper en papillote with ginger lime butter. Gendron Catering coordinates all rentals and has run events at a range of locales, from private estates to state parks.
