When she’s not living off-the-grid in her Catskill cabin, Amy Galper runs the New York Institute for Aromatherapy in NYC, a school offering aromatherapy certification. There she teaches all about essential oils, the aromatic compounds that are derived from some plants and are prized for their many medicinal and mood-boosting qualities. Galper’s go-to essential oil for energy and clarity is hemlock spruce, which grows locally. Just put one drop in your palm, rub your hands together, and breathe in. “It helps you get your head on straight, make decisions and get everything done,” Galper says.
