Easy Banana-Nut Bread (Recipe)

Polly’s Quick Banana Bread

Note: All ingredients should be room temperature

Mix together thoroughly:
1¾ cups flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt

In another bowl, blend on high speed 2-3 minutes (until lightened in color and texture):
2/3 cup sugar
5 1/3 Tbsp butter

Mix flour mixture with butter/sugar until the texture resembles brown sugar. Gradually add:
2 eggs, slightly beaten

Fold in just until combined:
2-3 very ripe bananas, mashed
1/3 cup chopped walnut pieces

Bake in a buttered loaf pan at 350 degrees for about 45-50 minutes (or until the sides pull away from the pan, and a toothpick inserted in the center comes out clean). Let rest about 5 minutes in the pan, then invert on a wire rack to cool. Enjoy!
