Though their selection is small, Bubby’s Burrito Stand in Red Hook serves up quality vegetarian burritos and quesadillas every summer. Owner Bjanette Andersen and her husband use fresh ingredients and don’t skimp on portions: Burritos are fall-out-of-the-tortilla stuffed with rice, beans, salsa, cheese, and lettuce; add guacamole for an extra fee. Voted Best Roadside Eats two years ago by editors of this magazine, this fleeting seasonal stop-off closes by autumn, when the owners retreat to Mexico where they run a café. There are a few picnic spots close by, or get your burrito to-go and head down to the nearby farm stand to load up on other goodies while you’re in town.
