Rachel Palombo, owner of rolling restaurant Rae Rae’s To Go, insists on buying and cooking only the healthiest food for her family. This — along with comments from friends about the difficulty of finding healthy food to-go — inspired her to sell wholesome versions of typical street-cart foods through her business. “Most times, these families would have to go to multiple establishments to find a meal for each person,” Palombo says, “since one is on a weight loss plan, another is vegetarian, one is on a gluten-free diet, while another likes really hearty and traditional foods.”
Popular choices include their fresh-cut fries, which are sliced per-order and fried separately from other foods (to maintain their gluten-free state); chili, which comes in vegetarian quinoa or meaty Angus beef varieties; wraps; soups; and a revolving list of specials. In addition, Palombo tries to use as much local produce as possible: Dairy products come from Hudson Valley Fresh, and she is a member of the Poughkeepsie Farm Project.
