Restaurant Spotlight: The Vault Tapas and Spirits, Beacon

Enjoy small plates at this chic Dutchess County eatery

Published:

Most recently the home of a Cantonese restaurant known as the Dim Sum Vault, this former bank building is now the Vault Tapas & Spirits; it sports a chic vibe and a menu to match. Our favorite part? The giant vault, situated behind the full bar, which holds a bevy of libations. Locally sourced ingredients are used to create small plates — like the red wine braised lamb sliders and brûléed figs — and larger offerings such as dry scallops and brined pork chops. Eleven signature combinations grace the cocktail menu, or as the eatery calls it, “the Vault’s Dividends.” Live music on Tuesday nights in the exposed-brick dining room, combined with cheese, charcuterie, and a little vino (19 vintages, to be exact), makes for a welcome midweek break.
