Most complicated drink you’ve ever made
A Hot-Buttered Bacon Bourbon. I’ve basically tried making it all from scratch, down to fat-washing some Hudson Baby Bourbon with bacon fat.
How do you incorporate Hudson Valley ingredients into the drinks at GLM?
A lot of what we use in the spring and summer to make syrups and shrubs for our cocktails comes straight from our own backyard. Turns out our head chef is also an expert landscaper, and she put together a fantastic garden.
What does “craft cocktail” mean to you?
It‘s a cocktail that’s been mapped out, ingredient by ingredient, by some kind of mad scientist. There’s someone taking the time to focus on the look, the flavor, the quality, and even the scent of every drink they make.
Least favorite cocktail to make
Mojitos. It has nothing to do with the drink itself, I just really hate saying the word “Mojito.” Every time I say it I think I sound like an idiot. Mojito. Yeah, even now. It’s awful. I hate everything about it. Except the drink itself.
1.5 oz Manhattan rye whiskey
1 oz sweet vermouth
1 oz Cacao liqueur
2 dashes molasses bitters
Dark chocolate-covered Luxardo cherry
Add whiskey, sweet vermouth, cacao, and bitters into a cocktail mixing glass. Fill mixing glass with ice and stir until chilled. Strain over fresh ice in an Old Fashioned rocks glass. Add Luxardo cherry, for garnish. Sip. Drink. Enjoy. Repeat.
