Almost everyone knows that one of the world’s premier culinary colleges sits on a hill overlooking the Hudson somewhere north of Poughkeepsie. And almost everyone knows that if you want to impress your sweetie with a one-of-a-kind meal to mark a special occasion, you make a reservation at one of the five student-run restaurants there. But there are plenty of other things about the Culinary Institute of America in Hyde Park that may come as a surprise to you.
