Now that it’s November, you’re sure to see all sorts of roots taking center stage at your local grocery. Easy to prepare any which way and usually low priced, these vegetables shine in our holiday meals and often fall into the comfort food category for many. But don’t let the likes of potatoes, yams, and parsnips get all the glory! It’s time to consider the seasonal produce you may be overlooking: the rutabaga. 

Rotund, knobby, and yellowish-brown in appearance, it’s easy to mistake this cool-weather cruciferous for a turnip (another under-appreciated fall root). They are extremely versatile, and can handle just about any preparation you’d normally give a potato — mashed, roasted, fried, or pureed into soup to name a few — but are loaded with nutritional benefits, too.
